The holidays are about food, family and festivities, but Chef Mike Isabella of Top Chef All-Stars says you can get more family time if you prepare what you can before hand… and his frittata recipe does the trick… CUT: (Isabella) Some butternut squash, some kale and some leeks. You want to saute for about five to ten minutes… so you want to keep the temperature at a middle range. Put the eggs in, and my frittata I'm going to do little dollops of the ricotta cheese. That's going to cook in and it's going to hold its texture so when you cut into it, you'll have little white pockets. It's a very festive, style holiday colors… you have your orange with the squash, you have your green, you have your white. It goes directly into the oven, 375-degrees, fifteen minutes.
