GET DRESSED FOR SUMMER

Release Date: 02 Aug 2012
ANCHOR LEAD: Now is the perfect time of year for a trip to your local farmers market so you can "dress up" salad ingredients for quick, delicious and nutritious meals. Brian Osuch has more. (:60)

SCRIPT: Lifestyles, I'm Brian Osuch. Summer is the best season for light and healthy eating, and nothing is better than a fresh salad. This is also the perfect time to take advantage of your local farmers market. Robin Miller is host of the Food Network's "Quick Fix Meals." Robin, why is now the best time to get fresh, seasonal produce?

CUT: (Miller) Because it hasn't travelled far, it's full of nutrients, it's full of flavor. It's affordable and you can make a variety of delicious salads with just a handful of ingredients.

SCRIPT: What's a good way to "dress up" a salad?

CUT: (Miller) Here's a really unique salad for any night of the week. Fresh lime juice, fresh lime zest, little sweet honey mustard and canola oil. I love adding that for its light texture and neutral flavor. It's got the least saturated fat of all the common cooking oils. And you sneak in some omega-3 fatty acids and vitamin E. Wisk that together, drizzle it over strawberries, blackberries, cucumber add some fresh mint, nestle it in a bib lettuce leaf, and you've got a beautiful salad for any night of the week.
